Jerk Bison Tostadas

I am a huge fan of food and always like to try something different. The Australian chef Jess Pryles, the genius behind Hardcore Carnivore seasoning put out what is called the “Freezer Challenge”. This is taking things from the freezer that have been there a while and using them in a dish. Challenge accepted! I decided why not try some Jerk Bison. (Jess I really wish you would make a Jerk seasoning!) I thought the idea sounded strange but then threw a curveball with tostadas. They came out pretty amazing to say the least. Here is the recipe and directions!

Recipe:

1 lb Bison Meat ( you can use ground, I used sirloin steak)

1 Sweet Onion

Jerk Seasoning

1 cup water

1 pack shredded cheese (Mexican is nice but I made this twice and preferred cheddar)

Pineapple salsa

1 can black beans

1 can roasted tomatoes (Diced)

1 avocado 

Flour tortillas

Sour cream

Directions:

I used a 1 lb. sirloin steak of bison seasoned with Jerk Seasoning in a crockpot for 4 hours with 1 cup of water and 1 chopped onion. After cooking until tender, remove steak and shred. Drain the liquid and take the cooked onion and put them a dish on the side.

Spray a large non-stick pan with extra virgin olive oil. 

Place tortilla in pan and cook until light brown on one side. 

Flip Tortilla, and place cheese, bison meat, onions, tomatoes, and black beans and cook until golden brown.

Remove from heat, place on plate and add pineapple salsa, sour cream, and avocado.

(If you prefer using ground bison, season meat, cook in pan until golden brown with the onions and follow the above directions.)

Eat and Enjoy.
