Jerk & Honey Steelhead Trout

If you want a great fish that is like salmon but not as expensive , give steelhead trout a chance. This is a huge go to and easy recipe to make. The jerk seasoning gives it a nice touch but is not overbearing, and the honey adds just the perfect amount of sweetness. Put this on a smoker or in an oven and add some great sides and you will want to add this recipe to your repertoire.

Ingredients: 

1 filet of Steelhead Trout

1/4 cup honey

Jerk Seasoning (Dry Rub)

Directions:

Heat smoker to 225 degrees. (Or oven)

Coat trout with honey. I drizzle it over but don’t try to put a thick layer on.

Season trout with jerk seasoning. Once again I give it a good coating but not to much that it takes away from the trout.

Spray tinfoil with extra virgin olive oil. 

Place trout on foil, then place in smoker.

Smoke trout until the desired temperature but I usually pull it off at 132 degrees and let it sit for a minute or 2 before serving. Make sure that when you check to the temperature that you check the thickest part.

A good tip to know if this is ready is you will see the fat starting to come out between the layers.

Serve this with a side of green beans and Jasmin rice and you have a great meal!
