Baked Chicken and Vegetables

Sometime simple is good. There is nothing wrong with a nice comfort food that takes a few minutes to prepare and the end result tastes great and is healthy. Check out one of my favorite recipes that is simple and easy.

Ingredients:

             3 chicken breasts

             4 medium potatoes, diced

             2 cups of your choice of mixed vegetables (such as carrots, bell peppers, broccoli, and zucchini) OR  I used peppers (2), Brussel sprouts (12 cut in half) and sweet potatoes (2)

             4 cloves of garlic, minced

             2 tablespoons olive oil

             1 teaspoon dried thyme

             1 teaspoon dried rosemary

             Salt and pepper to taste

In this recipe I used Fin & Feathers seasoning by Traeger , but the above seasonings hit the spot as well!

Instructions:

        1.      Preheat your oven to 400°F (200°C).

        2.      In a large bowl, mix the diced potatoes, mixed vegetables, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper until everything is evenly coated.

        3.      Place the chicken breasts on a glass pan sprayed with extra virgin olive oil.

        4.      Arrange the seasoned vegetables around the chicken on the baking sheet.

        5.      Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.

        6.      Once cooked, remove from the oven and let it rest for a few minutes before serving.

        7.      Serve the baked chicken with the roasted vegetables and potatoes hot, and enjoy your delicious meal!
