Holiday Dinner Side Dish- Part 4: Sweet Potatoes with Marshmallows

Oh let me tell you, I love sweet potatoes. I love them more during the holidays especially when they are covered with marshmallows.

So here’s a classic recipe for sweet potatoes topped with marshmallows, a deliciously sweet side dish perfect for the holiday season:

Sweet Potatoes with Marshmallows:

Ingredients:

(Adjust accordingly to the amount of people you are serving cause this dish will go fast.)

– 4 large sweet potatoes, peeled and cut into 1-inch cubes

– 1/4 cup unsalted butter, melted

– 1/4 cup brown sugar

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

Mini marshmallows (enough to cover the sweet potatoes)

Instructions:

1. Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.

2. Place the sweet potato cubes in a large pot of boiling water. Cook for about 10-15 minutes or until the sweet potatoes are tender but still firm. Drain and set aside.

3. In a mixing bowl, combine the melted butter, brown sugar, cinnamon, nutmeg, and salt.

4. Add the cooked sweet potato cubes to the bowl with the butter and spice mixture. Gently toss until the sweet potatoes are evenly coated.

5. Transfer the coated sweet potatoes to the greased baking dish, spreading them out in an even layer.

6. Cover the top of the sweet potatoes with a layer of mini marshmallows, making sure they cover the entire surface.

7. Bake in the preheated oven for 15-20 minutes or until the marshmallows are golden brown and slightly toasted.

8. Remove from the oven and let it cool for a few minutes before serving.
