Comforting Pheasant Soup: Hearty and Delicious

Pheasant is a delicious and high protein game bird that has great flavor and is easy to cook. This is a hearty, comforting soup perfect for colder days. If you have the opportunity to get your hands on some pheasant, this is a meal not to be missed.

Ingredients:

2 pheasant breasts, diced (4 breasts can be used if you want more meat)

1 cup wild rice, cooked

2 tbsp butter

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 tsp salt

½ tsp black pepper

½ tsp dried thyme

½ tsp dried sage

Instructions:

1. In a large pot, melt butter over medium heat. Saute onion, carrots, celery, and garlic until softened.

2. Add diced pheasant and cook until lightly browned.

3. Pour in broth, thyme, sage, salt, and pepper. Simmer for 20 minutes.

4. Stir in cooked wild rice and heavy cream. Simmer for another 5 minutes.

5. Adjust seasoning to taste and serve hot with crusty bread.

A simple meal from simple times for us to enjoy on those cold days when we need something more.
