Tender Smoked Short Ribs Recipe for BBQ Lovers

March 5, 2025

Looking for a good meal for 2-4 people, this one will hit the spot! After a few hours on the smoker your taste buds will be watering!

Ingredients: 3-5 lbs of Bone in Beef Chuck Short Ribs

HardCore Carnivore Black Seasoning

Dinosaur BBQ Sauce

Preparation:

Take rib chunks, put them in a large bowl and season them with your favorite dry rub. I prefer HardCore Carnivore Black. I give them a very liberal dose of seasoning and let them sit in the fridge between 15-24 hours. You want to do this so the seasoning starts to sink into the ribs chunks.

Smoking (I prefer cooking them this way. I use a Pitt Boss Smoker)

Instructions:

Preheat your smoker to 225°F. You can do 250 but I prefer slow cooking.

Place your ribs on the rack and let them cook for about 2 hours.Come back and check the temperature. Keep checking the temp each hour until they hit 165 degrees. Remove from smoker and place in aluminum pan or butcher paper after coating them with your favorite sauce. I always prefer Dinosaur BBQ but pick a flavor that you love. Cover them ribs in the pan with aluminum foil and cook for about another 2 hours. After the 2 hours, place them back on the grill for another hour until the sauce has some caramelization to them or until they reach 195-200 degrees. Remove from heat at that point.

Serving

Rest the Ribs: Remove the ribs from the smoker and let them rest for 10-15 minutes. This will help the juices redistribute throughout the meat. You can also add a bit more sauce to the meat.

Enjoy your delicious smoked Bone-In Beef Chuck Short Ribs! (I know I did!)
