Wild Turkey Breast Fried Bites

Turkey is one of those comfort foods that hits the spot every time.  This part 1 of a 3 week recipe series that deals with turkey. Whether you are a hunter or not, these recipes with fill you up, are easy to make, and will satisfy the whole family!

Think: crispy, golden, and perfect for dipping.

Ingredients:

1–2 lbs wild turkey breast (cut into bite-sized chunks) 

2 cups buttermilk

1 cup flour

1 cup cornmeal

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

½ tsp paprika

(Optional: Cayenne pepper to spice it up a bit)

Oil for frying

Instructions:

1. Soak the turkey chunks in buttermilk for at least 2 hours (overnight is even better).

2. In a separate bowl, mix flour, cornmeal, and seasonings.

3. Heat oil in a cast iron skillet or deep fryer to 350°F.

4. Dredge the turkey pieces in the flour mixture.

5. Fry in batches until golden brown (about 3–4 minutes per side).

6. Drain on paper towels and serve with hot sauce or ranch.

Pro tip: Use a meat tenderizer on the breast beforehand for extra juicy bites.
