Wild Turkey & Mushroom Cream Sauce (Over Rice or Pasta)

We decide that last recipe in this series of 3 wild turkey recipes would be a bit more difficult to make but it is 100% worth making. This rich, rustic dish that highlights the flavor of wild turkey thighs or tenderloins will become a recipe you will want to make time after time.

Ingredients:

1–2 lbs turkey thigh or tenderloin (sliced thin)

2 tbsp butter

1 tbsp olive oil

1 cup mushrooms (cremini or wild)

2 cloves garlic, minced

1 cup heavy cream or half-and-half

½ cup chicken broth or white wine

Salt, pepper, and fresh thyme or parsley

Instructions:

1. Heat oil and butter in a skillet over medium heat.

2. Add turkey slices, season with salt and pepper, and brown until just cooked through. Remove and set aside.

3. In the same pan, sauté mushrooms until soft and golden.

4. Add garlic, then deglaze with broth or wine.

5. Stir in cream and simmer until slightly thickened.

6. Return turkey to the pan, simmer another few minutes.

7. Serve over rice, mashed potatoes, or noodles.

Perfect for: A cozy dinner after a long day outdoors.
