
“Check Out Those Carrots!”
Here is a really simple dish that everyone seems to enjoy for any dinner and especially one to save for the holidays! As gardens are finishing up their season, you hopefully had these in there! If you use tri-colored carrots it pops a bit on the dinner table. Even better will be the taste! Try these out!
Ingredients:
– 1 pound tri colored carrots, peeled and sliced diagonally into 1/4-inch thick pieces
– 2 tablespoons unsalted butter
– 2 tablespoons honey
– 1/2 cup vegetable or chicken broth
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish, optional)
Instructions:
1. In a large skillet or saucepan, melt the butter over medium heat.
2. Add the sliced carrots to the skillet and sauté for about 3-4 minutes, stirring occasionally.
3. Pour in the honey and broth, stirring to combine. Bring the mixture to a simmer.
4. Reduce the heat to medium-low, cover the skillet, and let the carrots simmer for 12-15 minutes or until they are tender and the liquid has reduced to a glaze, stirring occasionally.
5. Once the carrots are glazed and tender, season with salt and pepper to taste.
6. Transfer the honey glazed carrots to a serving dish, garnish with chopped fresh parsley if desired, and serve hot as a deliciously sweet and savory side dish for your meal.
