There’s something grounding about a simple pot of soup on the stove. No noise. No rush. Just steam, quiet, and a spoon in your hand. This recipe is one of those reset meals, perfect after a long day outside or when your mind just needs something easy.
Creamy Potato Onion Soup (5 Ingredients)
Ingredients
3 large potatoes, peeled & diced
1 small onion, diced
3 cups chicken broth
½ cup heavy cream (or milk)
Salt & black pepper to taste
(Pro tip: Add some green onions to add a little color to the soup)
Instructions
- Add potatoes, onion, and broth to a pot.
- Bring to a boil, then simmer for about 15 minutes until potatoes are soft.
- Blend with an immersion blender (or carefully in a blender) until smooth.
- Stir in cream, season with salt and pepper, and heat 2 more minutes.
This is comfort without complication and a great easy meal when you need something warm to fill the soul.
(We love the Ninja Immersion Blender and Whisk. It is easy, simple to use and simple to clean)
